Margo in the Kitchen, Oh me Oh my...Alert: Recipe Change

Alert: I forgot to tell you 1c raisins when this was first published. Please see new ingredients list below. See why I stay out of the Kitchen.

I decided to get a little homemakery and get to baking some of my favorite Cranberry Spice Loaf this Sunday.
For those who know me, you know that I do not do a lot of cooking. As a matter of fact it is usually my least favorite activity and to be avoided at all costs. But today I decided I needed the sounds and smells of Christmas so out come the baking goodies.

I love this recipe because it's fairly easy, usues easy to find ingredients, tasts fabulous, fills the house with spicy christmasy smells and did I say it was easy...

1/2 c Shortening (Or I use apple sauce in equal amount)
1c sugar
1 egg
1c raisins
1/2 c chopped nuts
1 3/4 c flour
1/4 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp cloves
and 1 can of whole berry cranberry sauce.

Cream shortening (apple sauce) , sugar and egg. Stir in raisins and nuts. Combine dry ingredients and sift into first mixture. Stir in cranberry sauce. Pour into greased floured loaf pan(s). bake at 350 for 40-50 mins

I triple the recipe and have plenty to share

Well, that's my baking for the year. And it is oh so yummy.

I am so with you on the cooking thing. I would rather be in my studio cooking up a few projects instead!
